Tara gum

It is a galactomannan like Guar and LBG. The polysaccharide has a ratio of 1:3 of galactose and mannose molecules.

It is stable over a large range of pH, soluble in warm water and it has a viscosity about 5000 cps.

Applications

  • Ice cream and ice lollies
  • Water jellies (in combination with carrageenan, agar, xanthan)
  • Brine for meat injection (in combination with carrageenan)
  • Spreadable cheese and sauces
